Can I put the POS on one branch first and see how it goes?

Yes, and it is what we would suggest. Buy the add-on for the busiest branch, run it for a month, and use what you learn to set the others up in an afternoon each. Nothing about the other branches changes while you do it, and grouping them later does not disturb anything.
