Do I have to close the shift every night?

Nothing forces you, but you should. Closing is what counts the drawer, works out the difference and writes the day down with a Z number. Leave it open and the figures run on into tomorrow, so nobody can say which night a shortage came from. Two minutes at the end of service saves an argument a week later.
