Does renaming a choice lose its stock count?

Not in the item form — a rename keeps the same underlying record, so the count on the Inventory page comes with it. Removing a choice and adding another does start fresh, because that is genuinely a different choice. Through a 'replace' Excel import everything is rebuilt, so per-option counts start again there.
