How do I record food we had to throw away?

Use the Wastage panel on Menu, then Ingredients & suppliers. Pick the ingredient, type how much, type why, such as spoiled or dropped, and press Record. It comes off the shelf and is written down as waste. Recording it matters more than it looks: waste you never write down turns into a stock take surprise you cannot explain.
