If I replace my menu from a spreadsheet, do I lose my recipes?

Yes, so plan for it. Add to current menu changes nothing. Replace menu rebuilds every dish as a new record, and recipes stay with the old ones, so your new dishes start with no recipe and no food cost. Dish counts and alert levels can be carried across on the Repair menu links screen after the upload, but recipes have to be added again.
