Somebody left the team. How do I take their POS access away?

Switch them off under People at the POS. Their PIN stops working at once and they cannot sign in anywhere. Every sale they ever took keeps their name on it, which is exactly what you want when you are looking back at a night three weeks later. Never remove a person to tidy up history.
