What happens if I forget to close the shift?

It stays open and keeps collecting sales. Next morning the POS tells you a shift is already open instead of letting you start a second one. Close it, counting whatever is actually in the drawer now, then open a fresh one. The count will look odd for that shift, so use the note box to say the shift was left running overnight.
