The one you would say out loud while counting the shelf. Grams, kilograms, millilitres, litres or pieces. Milk in millilitres, chicken in kilograms, takeaway boxes in pieces is a perfectly normal mix. Pick it when you add the ingredient on Menu, then Ingredients & suppliers, and use the same unit in the recipe later.
