Who actually holds the charity money my customers round up?

You do — the round-up is paid to you with the rest of the order, and the platform never receives, holds or forwards any of it. You remit it to the cause you named; customers are told exactly that at checkout. The Games & extras page shows what you owe, and your revenue is reported with donations removed. Donations are never taxed as a sale.
