Why did my food cost change when I did not touch a recipe?

Almost always because you received a delivery at a different price. Receiving moves that ingredient's average cost, and every recipe using it is worked out from that cost, so the dish gets dearer or cheaper on its own. That is the point of food costing software: the number tells you the truth this week, not the truth on the day you typed it.
