Why will the POS not let me type more than the total on the card machine button?

Because only cash can be over. If the card machine took the exact amount and somebody types more, the difference would come out of your drawer as change against money the card never paid. So overpaying is refused on anything that is not cash, with a message saying so. On cash it is fine, and the change owed is worked out for you and shown big.
