Can the kitchen screen be in Arabic?

Yes, and it is set per device. On that device open Settings → Language and choose Arabic; the screen's own wording changes. Dish names show in Arabic where you have given the dish an Arabic name, and keep the name you typed where you have not. The language of a printed receipt is chosen when it prints, not here.
