Do voided sales just disappear?

No. A void is recorded with the reason, the manager who approved it and the time. The number of voids and their value are on the Z report for that shift, and on Reports, Shifts and the POS as sales cancelled after printing. Discounts, refunds and voids are the three quiet ways money leaves a restaurant, so all three are reported.
