How does a cook know an order is running late?

By colour, read from two metres away. A brand new ticket has a green edge and a JUST IN badge for its first minute. Every ticket shows a target of 8:00. Past about five minutes the clock turns amber, and past eight minutes the whole ticket goes red, header and all. A thin border alone is not enough across a hot kitchen.
