How does a waiter start a table?

Tap the table on the Tables screen of a waiter phone or a POS machine. A free table opens straight away with an empty tab; a table that already has one opens what is on it. There is only ever one open tab per table, so two waiters cannot start two bills for the same guests. The tab shows who opened it and at what time.
