How many delivery apps can I have connected at the same time?

All of them. The Delivery apps page shows one card per app, so one store id per app, and each keeps its own switches, its own Minutes to prepare and its own status. A busy kitchen usually runs three or four. They all land on the same orders board and the same kitchen screen. The Orders from delivery apps tab in the docs describes the cards.
