Yes, while nothing has been paid. Open the table and change the split: moving between By item and Evenly rebuilds the bills, and tapping a dish on a bill takes it back off. Everything unassigned stays on the table. Once one bill has been paid, the shape is fixed, so ask the table what they want before you start.
