What are the two affiliate payout models and can I change my mind?

One pays you a single larger amount for the first month of a restaurant you introduced; the other pays you a smaller amount every month for as long as that restaurant stays with us. You choose per link, so you can run both at once on different links. A link you have already shared keeps the model it was created with — changing it under a restaurant that signed up on those terms would move the goalposts after the fact, so make a new link instead.
