What does archiving an affiliate link do to restaurants already on it?

Nothing. Archiving stops the link bringing in anything new; every restaurant already attributed to it stays attributed, and anything owed on them keeps accruing and being paid as normal. It is a way of tidying up, not a way of ending an arrangement.
