It opens on the floor plan instead of a selling screen, because a waiter starts at a table rather than at a counter. They take a round, send it to the kitchen, add another round later and settle the bill. Tables and their rounds live with us rather than on the phone, so a table opened by a waiter is visible at the counter and on the kitchen screen too.
