Which of my dishes actually make me money? The best sellers list only tells me what sells most.

Open Menu → Recipes & food cost. The Every dish table lists each dish with its menu price, its food cost, its margin in money and as a percentage, and how many ingredients its recipe uses. Read down it and you will often find a dish that sells slowly but keeps seventy per cent, and a best seller that keeps thirty. Dishes with no recipe show none, so give your top ten sellers a recipe first and the picture appears quickly. The heading of the page shows your average margin across every dish that has a recipe.
