Why does a restaurant I onboarded have so little time before it needs paying for?

Because it is not a self-serve trial. A restaurant that signs itself up is exploring; a restaurant a partner built and handed over has already been sold to, so it gets a day rather than a fortnight. If you need longer for a specific restaurant, ask rather than letting it run out.
