Why will the POS not let me void a paid sale?

Because a void would quietly undo a payment and leave the drawer and the report telling different stories. Money that came in has to go back out as a refund, with its own reason, its own approver and its own line on the Z report. The POS says so in plain words and points you at the refund instead.
